Purple Beauty- the pepper that LIES

Lat winter, I traded some extra habanero seeds for some seeds of these pretty Purple Beauties. They are smallish bells, and quite delish. They grow easily, too.

This is how they look just after coring. I was a bit surprised to find green innards.

This is how they look freshly added to a pan.

And this is how they look after 5 minutes of sauteeing. The lying liars turn GREEN.

A couple of days ago I included a couple of these deceptive Beauties to a giardiniera lacto crock. I wonder if they will hold their color. Will let you know in 4 weeks.

Those are really pretty peppers! Too bad they don't hold their color when cooked. They would be really pretty in a veggie tray, though.

Funny, there are also those purple beans that turn green when you cook 'em.

They look beautiful, though, even if they lie. Other vegetables turn from purple to green when they're cooked - like some beans. It's a pity. Have you tried eating the peppers raw?

and purple potatoes...they go a little brown-gray when boiled - not the zingy bright purple they fool you into thinking you'll get. But if you bake them (like on pizza) they stay lovely; maybe the peppers would, too.

Hahaha! I've gotten some of those lovely peppers myself and was too surprised when I cut into them. I guess they only stay that pretty purple color if you eat them raw and don't look at the inside? ;-)

They are really tasty though, aren't they?

I'm intuiting that perhaps your relationship with "The Purple Peppers" is a tad strained. Perhaps some relationship counseling? Perhaps some role playing? Maybe YOU should try being a purple pepper that goes all green when you're getting COOKED TO DEATH! DID YOU EVER THINK ABOUT THAT???!!!!!

Did you pick a peck of purple peppers? .. and did they pickle?

Gee ... the red ones and the yellow ones don't do that.

Maybe purple needs the therapy.

Sorry. I didn't eat lunch and I think my low blood sugar got the best of me. It seemed a lot funnier before I posted it. You can remove my previous post if you want -- I'll understand completely.

Rabbit saint- I am pickling a few purple peppers, but sadly, not a peck. Doubt I'll have even that much this season. We've had a blast of cool weather and I swear I can already smell autumn.

One never knows...I have to say, you have beauteous veggies. It gives me incentive to sharpen up my gardening skills.

I was sooo disappointed when my purple beans turned green after being cooked!

I guess it is good to have a variety so you can use the dark colored ones raw...
